Holger Lutz (born in Franconia, 1976), who has been with Hans Sobotka since 2006 and was head chef of the Endtenfang gourmet restaurant since 2011, now heads the kitchen at Taverna & Trattoria Palio. Influenced by his stations in German star gastronomy - Gourmet Restaurant Palais in Würzburg, Hotel Alpenhof Murnau, Wald & Schlosshotel Friedrichsruhe with Lothar Eiermann and chef at Hiscox Art Bar & Restaurant in Munich and at Bischoff am See in Tegernsee - he returned to the Fürstenhof Celle in 2006, first as Sous Chef, then to the Gourmet Restaurant Endtenfang, where he has been chef de cuisine and now heads the Taverna & Trattoria Palio since 2011 and is now also chef de cuisine at Taverna & Trattoria Palio.
