Restaurant Überfahrt on Lake Tegernsee reopened its doors to gourmets and connoisseurs in September 2024 after a phase of redesign. Under the direction of renowned chef Cornelia Fischer, the restaurant focuses on a philosophy that combines local ties with global influences.
Cornelia Fischer, who was recently named ‘Chef of the Year 2024’ by Schlemmer Atlas, is bringing her impressive experience and creativity back to the Althoff Seehotel Überfahrt. After working in first-class kitchens in Germany and Switzerland, she is returning to her former place of work. She was already part of the team at Restaurant Überfahrt from 2015 to 2018. She is regarded as one of the greatest culinary talents in the German-speaking world and her modern and cosmopolitan approach to cooking promises to delight guests with innovative and flavourful dishes.
Mrs Fischer, the Restaurant Überfahrt has reopened with a new concept. What can guests expect?
Cornelia Fischer: We have completely revised the concept to create a harmonious connection between regional products and global flavours. Our credo ‘Regional connection with a view of the world’ runs through every dish. Guests can look forward to a culinary journey that combines local heroes and international influences.
What makes the new culinary concept special?
Cornelia Fischer: We offer two menus, one vegetarian and one with meat & fish. The menus are inspired by nature, which allows us to return to the origins again and again. Our ‘forerunners’ are particularly exciting - small flavour additions that set the mood for the next course and present the same ingredients in a surprisingly different way.
How important is sustainability in the kitchen to you?
Cornelia Fischer: Sustainability is essential for us. Many of our ingredients come from the region, and from next year we will be growing our own produce in our hotel garden. This gives us maximum control over quality and sustainability. In this way, we can guarantee our guests outstanding flavour.
Can you tell us something about the drinks accompaniment?
Cornelia Fischer: Of course! Our Head Sommelière Marie Christin Baunach has put together an exquisite selection of wines.
In addition to classic wines, we also offer non-alcoholic options such as sparkling tea and homemade juices. These accompaniments are carefully matched to our menus to complete the flavour experience.
The restaurant has also been given a new design. What can you tell us about it?
Cornelia Fischer: The new design reflects the natural beauty of Lake Tegernsee and creates a relaxed atmosphere. The colours are natural and calming, which enhances the feel-good experience for our guests. Our service team also wears clothing that is culturally rooted and modern at the same time. Your professional career is impressive: completing your apprenticeship as the best in your year, followed by positions at prestigious addresses. What brought you back to Restaurant Überfahrt?
Cornelia Fischer: After training as a chef, my career took me to highly acclaimed kitchens in Germany and Switzerland. In 2021, I returned to my home in Lower Franconia, where I managed two restaurants as head chef at Hotel Zur Schwane. These included the Michelin-starred ‘Weinstock’. Returning to Restaurant Überfahrt feels like coming home. I'm looking forward to working with a great team.
