Sarmeela Rupietta: The Fährhütte14 combines its unique location directly on the lake with a relaxed, exclusive atmosphere. Our guests don't have to choose between idyllic views or creative dishes. This interplay makes us an unforgettable experience.
How do you integrate the concepts of sustainability and regionality into your restaurant offering?
Sarmeela Rupietta: Sustainability is very important to us. We source our ingredients mainly from local producers and focus on seasonal produce to ensure the freshness and quality of our dishes.
Can you describe how your culinary experiences have influenced your cooking style, Mr Schmitz?
Arne Schmitz: My experience in various international cuisines, especially Mediterranean cuisine, has strongly influenced my style. I love reinterpreting classic dishes and getting the best out of good food. I also take great pleasure in creating exciting dishes from simple ingredients.
Which dish on your menu would you describe as the signature dish of Fährhütte14 and why?
Arne Schmitz: Our signature dish is the Fährhütte bouillabaisse, which is a local interpretation of the French classic. We use fresh fish and shellfish from Lake Tegernsee and the region, which gives this dish a unique, regional flavour. It reflects our commitment to quality and the connection to local culture and nature.
