Recipe „Fährhütte14 Tatar“
The classic (for 2 persons)
Ingredients

250g fillet of Simmental beef

2 tablespoons of extra virgin olive oil

1 teaspoon salt capers

1 tablespoon anchovy fillets (pickled)

½ clove fresh garlic

1 tablespoon Ketchup
-
1 tablespoon mustard
-
1 tablespoon sauteed shallots Brunuoise

1 tablespoon Worcestersauce
-
½ teaspoon cayenne pepper
-
50g Tomatoes marinated in oil

Maldon Salt
-
Freshly ground pepper
Preperation
- Trim the meat, removing any tendons and excess fat, then finely chop it.
- Season with a pinch of salt and freshly ground pepper, and refrigerate for 20 minutes.
- Place the remaining ingredients in a food processor and blend until reaching a smooth consistency.
- Take the tartare out of the refrigerator and season it with the prepared seasoning paste.
- Adjust the taste with additional salt, freshly ground pepper, and a drizzle of olive oil, if desired.
- Plate and serve.
